1 cup dry bulgur wheat
1and a half cups boiling water
1 and a half teaspoons salt
1/4 cup lime juice( fresh squeezed)
1 heaping teaspoon fresh(!!!) garlic, crushed
1/2 cup chopped mint
1/2 cup chopped scallions
1 packed cup fresh chopped cilantro
2 medium tomatoes, chopped
1/4 cup good olive oil
1 cup diced grapes (i cut them in quarters)
Combine bulgur, boiling water and salt. Cover and let stand for at least 45 minutes.
Add lime juice, oil and some black pepper.Mix and refridgerate three hours. Just before serving, add all else and stir gently.
my sister uses parsley instead of cilantro, lemon juice instead of lime, and doesn't add grapes or mint. her recipe is good too
