half a bunch of celery chopped
4 carrots chopped
1 small red onion sliced
thumb sized piece of ginger peeled and chopped finely
1 jalapeno chopped finely
1/3 cup rice
2 T pepper (to taste)
2 T salt (to taste)
2 T garlic powder (to taste)
2 red potatoes chunked
i'm not sure what size pot im using. i think it is 6 quarts. it's the biggest one i have, anyway.
put everything in the pot, fill most of the way with water and cook very slowly. after it has reduced about 25%, take the chicken carcass out and strip the meat off (messy but fun). put the meat back in and serve/store/freeze.
